Hummus Wrap
Hummus Wraps are a delicious and healthy lunch option that is super quick to make. You can even make them in advance for the week ahead! You can really customize hummus wraps but my go-to version is filled with turkey, crisp veggies, feta, and of course hummus. I love that I can easily swap out ingredients, using whatever leftover meat and veg is in my fridge. Hummus wraps make a nice light lunch and are packed with protein to get you through the day.
INGREDIENTS:
1 wrap or tortilla
2 tablespoons hummus
3 ounces deli turkey
1/4 cup cucumber, julienned
1/4 red bell pepper, julienned
1 tablespoons feta cheese
To make the wrap, simply lay a tortilla/wrap on a plate. Spread 2 tablespoons of hummus all over the surface, leaving a small border around the wrap. Down the middle of the wrap, layer on the turkey slices, cucumber, and bell pepper. Then, layer the cheese over the top. Fold in the sides and roll up like a burrito, cut in half and serve with some fruit and pretzel crisps.
