MONDAY
Breakfast Ham & Cheese Scramble
Morning Snack Toast + Jam
Lunch Tacos (Leftover from Sunday)
Afternoon Snack Granola Bar
Dinner Turkey Chili
Dessert Peach Upside-Down Cake
I scramble eggs, chopped ham, shredded cheese, salt & pepper in a pan over Medium heat until the eggs are set to my taste. Easy Peasy!
I used the leftovers from Sunday night for my lunch on Monday. If you weren’t following last week, you could make a quick salad or sandwich!
Thomas is on a TDY this week so that means I can make a big pot of Chili to enjoy all week. Thomas hates beans of any kind. So while he is away, I will enjoy some chili.
A few weeks back we had a lot of delicious peaches that I wanted to use up. Abby and I started looking for a dessert recipe for a peach cake and we discovered this gem right here!! Abby made it herself with minimal help from me the first time around and it turned out beautifully. My Husband requested it while his Mother was in town last week and we made it again. It is a new family favorite!
Tuesday
Breakfast Oatmeal
Morning Snack Smoothie
Lunch Turkey Chili (leftover)
Afternoon Snack Veggies + Hummus
Dinner Slow Cooker Roast Beef with Mac + Cheese
& Green Beans
Oatmeal is one of Abby’s favorite breakfasts. We make it according to the package and then add a splash of milk and whatever extra fruit we have that needs to be used up.
I love a warm bowl of chili and I like to pair mine with buttered saltine crackers. Do you like crackers or cornbread with your chili? Let me know in the comments!
Slow Cooked Roast beef. I love those four words and I love it even more paired with my favorite macaroni & cheese recipe and crisp green beans!
I’ve always been a huge fan of Martha Stewart. I would watch her on TV as a kid and I was in awe of how she did everything with such ease. She seems to have a passion for learning and I am slowing collecting all of her books. I stumbled across this recipe in one of my favorite cookbooks written by Martha and its beyond good. I do make some modifications to suit my tastes… I do not add the breading on top, simply because I prefer it without it. I add diced onions to the butter and cook them for a bit before adding in the flour. I also have used whatever cheese (Usually mild cheddar and parmesan) I have on hand and its been perfect every time.
Wednesday
Breakfast Greek Yogurt Pancakes
Morning Snack Fruit
Lunch Roast Beef Sandwiches (with leftover roast beef)
Afternoon Snack Granola bar
Dinner Burrito Bowls with Ground Turkey
If you followed along from last week, you know how much my family enjoys this pancake recipe right here. If you are new, try this life changing recipe!
I use some of that roast beef to create a delicious roast beef sandwich. I like mine with just beef and a little mayo but feel free to top yours with cheese, tomatoes & lettuce.
When I saw brown rice and ground turkey on sale this week at Aldi I immediately thought they would be perfect for a burrito bowl. They are great for on the go too!
Thursday
Breakfast Ham & Cheese Scramble
Morning Snack Toast + Jam
Lunch Burrito bowl to go (with leftovers from last night
Afternoon Snack Veggies + Hummus
Dinner Slow Cooker Roast Beef with Mac + Cheese
& Green Beans
I am repeating the yummy ham & cheese scramble. I promise I am not lazy, its cost effective and cuts down on waste.
I used the leftovers from the night before to make a quick grab and go lunch for myself.
I’m using up the last of my roast beef and mac + cheese tonight. All I have to do is saute some fresh green beans!
Friday
Breakfast Oatmeal
Morning Snack Fruit
Lunch Grilled Chicken Salad
Afternoon Snack Granola Bar
Dinner Pizza Movie Night
Repeating these delicious bowls of oatmeal topped with fruit and a splash of milk. We love adding a dash of cinnamon too. What are your favorite toppings? Tell us in the comments!
I am using some of that shredded lettuce with grilled chicken to make a quick salad. When I bring my chicken home, I like to cut them vertically so I have 6-8 thinner pieces instead of the 4 whole pieces. This extends our budget and cuts down on waste.
Its our favorite time again, Pizza Movie Night!!! Its Abby’s pick tonight and I bet you she will pick Wonder Woman again. What are your favorite family traditions? Tell us in the comments!
Saturday
Breakfast Greek Yogurt Pancakes
Morning Snack Smoothie
Lunch Turkey Chili (Leftovers)
Afternoon Snack Veggie + Hummus
Dinner Sweet Heat Chicken Wings
I have some leftover chocolate and peanut butter chips that I plan on tossing in this morning for a sweet surprise! Who doesn’t love the combination of chocolate & peanut butter?
I am using the last of my chili stash for a hearty lunch. Saturdays are really busy at the shop so I need the extra protein to get me through the day.
We’ve been using this chicken wings recipe for years. It has lots of flavor but is mild enough that even my daughter likes them. These wings are definitely worth a try! We are pairing our with some fries I splurged on at Aldi.
Sunday
Breakfast Ham & Cheese Scramble
Morning Snack Fruit
Lunch Kitchen Sink Salad
Afternoon Snack Granola Bar
Dinner Chicken & Rice Casserole
Time to use up the last of the eggs, ham and cheese in one more delicious scramble. Bored of the scramble? Change it up! Make it into an omelet or an over-easy egg with fried ham on the side! Eggs have endless possibilities.
If you followed from last week, you know I like to make a Kitchen Sink Salad with the remaining protein and veggies in my fridge. This ensures nothing goes to waste, making me a happy mama.
We’re trying out this new recipe this week. I got some lovely brown rice I got on sale at Aldi and I can pair that with the chicken I sliced in half vertically earlier this week. My husband loves chicken & rice so I am hoping he likes this new dish.
